Fenugreek (Trigonella foenum-graecum) is grown extensively in Rajasthan, Gujarat, Madhya Pradesh, Uttar Pradesh, Maharashtra and Punjab. The herb is a characteristic ingredient in some curries and chutneys and the fenugreek extract is used to make imitation maple syrup. As it has high nutritive contents, it is an important ingredient in vegetable and dhal dishes eaten in India. It is traditionally used to stimulate the metabolism and thereby to control the blood sugar levels of diabetic patients as it is rich in Iron. Fenugreek is used medicinally as a digestive aid and to promote lactation in women. Food is a ‘language’ spoken in every culture. Making this language organic allows for an important cultural revolution whereby diversity and biodiversity are embraced while chemical toxins and environmental harm are radically eliminated.
